Snack-attack Beetroot Hummus

Hummus is extremely versatile; you can enjoy it in many forms and is great as a snack. Nutrition Coach, Darragh Henry, gives us his delicious recipe for Beetroot Hummus.

Hummus is extremely versatile; you can enjoy it in many forms. If you’re a person who struggles to eat veg, then it is a great way to add more veg to your diet.

“When should I eat this?”

Try roasted red pepper hummus, lemon and coriander hummus or this beetroot hummus. Enjoy in salads, sandwiches, wraps or as a dip with some carrot or celery sticks. The possibilities are endless. If you’re feeling a little peckish and want something to tide you over until lunch or dinner, then look no further than this simple snack.

The Showdown

Ingredients

2 cloves of garlic.1 Tablespoon of smooth peanut butter.2 Tablespoons of olive oil.Salt.6 balls of beetroot from a vinaigrette.The juice of 1 lemon.1 Can of chickpeas.

Cooking method

In a blender, blend 2 cloves of garlic until finely done.Drain the chickpeas and add, with a tablespoon of peanut butter, the juice of 1 lemon, 2 tablespoons of olive oil, the beetroot, and a pinch of salt.Blitz until you get a smooth dip.Enjoy with some carrot or celery sticks, on a salad or in some wraps or sandwiches.
